Any workarounds to avoiding a specific road in your Nuvi's route calculation? (In my case, the Dan Ryan in Chicago, my Nuvi always wants to use the Dan Ryan, when I know better.) Do you guys just set a waypoint?

This is something that almost led me to the TomTom, can't believe Garmin hasn't included it yet in their Nuvi's.

No, the only option is via points or trying to change the route calculation method to see if it will give you a more desirable route.

Is it possible in the 760 to assign a favorite for say an intersection and plan a route for 1. A Menu Arrow 2. Intersection Menu Arrow 3. B? Would it work for both directions or do I have to have a separate favorite for each direction?

The 760 offers route planning, so you can build up a route with multiple points like you describe. It will work in both directions unless it is a divided highway or an interstate in which case the lane does matter and will need to be different in different directions.
